Ok, I was daring tonight and fixed eggplant parmesan for dinner. First time I've ever had it, and to make it at home?????

Personally, I don't care much for eggplant, but my aunt has it in her garden and has been begging people to take it. So I decided to give it a try. It wasn't too bad. A little bit of eggplant underbite, but I can live with it. And the marinated cucumbers and the fresh sliced tomato rounded it out nicely.
